Pumpkin Pie
This is such a good recipe. I grew up not liking pumpkin pie but I made this for my family and loved it the first time I tasted it. I cook my pumpkin and have never used canned. You likely can use the canned but I can't say it will be as good. To cook your pumpkin, peal and seed the pumpkin and boil it in unsalted water. I mash it and put it in the blender to make sure it is good and smooth. I freeze any leftover pumpkin to be used for cookies and pumpkin bread.

2/3 cup brown sugar
1/2 tsp salt
1/4 tsp cinnamon
1/2 tsp nutmeg
3 Tbs molasses
1 1/2 cooked pumpkin
2 eggs beaten
2 cups milk (I use 1 cup light cream and 1 cup milk)
Pastry for 1-crust 9-inch pie

I pre-bake the pie shell for a few minutes (3-4 min) so it gives it a head start and it doesn't get soggy.

Mix all ingredients and pour into pie shell. Bake for 8 minutes at 500 F and then reduce oven heat to 325 F and continue baking for 55-60 minutes.

Crackle Top Peanut Butter Cookies
This is a great recipe and easy to make too. I like it even better than the traditional peanut butter cookies that you press down with a fork.

3/4 cup butter
3/4 cup sugar
3/4 cup brown sugar
3/4 cup peanut butter (I use crunchy as it covers the texture of the whole wheat flour)
1 egg
1 tsp vanilla
1 3/4 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
loose sugar to roll cookies in

Cream butter, sugars and peanut butter. Beat in egg and vanilla. Add dry ingredients. Mix well. Form balls with dough and roll in loose sugar. Put onto ungreased cookie sheet and bake 10-12 minutes at 375 F. Makes about 4 dozen.

Zucchini Bread
I found this recipe in a church cookbook when a friend gave me a zucchini this week. It is a fine recipe. I have made it twice already.

2/3 cup butter
2 2/3 cups white sugar
4 eggs
3 cups shredded zucchini
1 tsp vanilla
2/3 cup water
3 1/3 cups whole wheat flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp ground cloves
2 cups raisins (optional)

Preheat oven to 350 F.
Cream butter and sugar. Beat in eggs, zucchini and vanilla. Add dry ingredients alternately with water. Mix in raisins if desired.

Pour into three well greased loaf pans. I even put wax paper on the bottom as I find it wants to stick. Grease the wax paper if you use it.

Bake for 60 minutes or until done.

Nova Scotia Oat Cakes
Every time I go to Cape Breton, I enjoy their oat cakes. I picked this recipe up in one of their tourist brochures. It is fabulous and healthy too.

3 cups rolled oats
3 cups whole wheat flour
1/2 cup brown sugar
1/2 tsp baking soda
2 cups butter
1/2 cup sugar

Preheat oven to 350 F. Combine all dry ingredients in large bowl. Cut in butter and work with hands until dough is manageable. Moisten with cold water. Roll out using flour underneath dough so it does not stick to board. Cut into squares or diamonds. Bake for about 15 minutes until nicely golden on ungreased cookie sheet. Makes 5 dozen.

Change in Scheduling
There will be a few changes in the scheduling for the months of September and October. For the first two weeks of September, Sunny Side Up will air on Thursdays from 9-11 instead of Mondays. I will keep you update for future changes. Sorry for any inconvenience.
