Soft Pumpkin Chocolate Chip Cookies

These cookies have a wonderful flavor. They are a soft cookie like a molasses cookie. Like my pie, I cook my pumpkin from scratch but you can use canned if you wish. For instructions on preparing the pumpkin from scratch, check my pumpkin pie recipe. This recipe makes lots of cookies and you may want to half it.

1 1/2 cups butter
2 cups brown sugar
1 egg
1 tsp vanilla
2 cups pumpkin
1 tsp salt
2 tsp cinnamon
2 tsp soda
4 cups flour (I use whole wheat)
2 cups rolled oats
2 cups chocolate chips (I use the milk chocolate)

Preheat oven to 350 F.
Combine dry ingredients and set aside.
Cream butter, sugar, egg, vanilla and pumpkin.
Stir in dry ingredients and mix well.
Stir in chocolate chips.
Drop by teaspoonfuls onto lightly greased cookie sheet.
Bake 17-20 minutes until edges are golden brown.
