Turkey Stuffing
This recipe is sure to please all, even some who do not think they like stuffing. I always triple the recipe as it freezes well and is good to have on hand when making roast chicken. But, it is so good that quite often, there is none left to freeze. One of our favorite things to do with the leftovers is to make turkey sandwiches with sliced turkey, a layer of dressing, a layer of cranberry sauce and mayonnaise. It is truly yummy!

1 small onion minced
1/2 cup butter
3 cups cold riced potatoes
1 cup day-old bread crumbs or cubes
1 egg
2 Tbs milk
salt to flavor
poultry seasoning to taste. Start with 1/2 tsp and keep adding until desired flavor is reached.
1/4 tsp celery seed

Sautee 1/2 of the minced onion in the butter. Mix into all other ingredients and mix all lightly. Put into a casserole dish. I like to pour on some turkey drippings for flavor. Bake until hot and edges start to brown.
