Zucchini Bread
I found this recipe in a church cookbook when a friend gave me a zucchini this week. It is a fine recipe. I have made it twice already.
2/3 cup butter
2 2/3 cups white sugar
4 eggs
3 cups shredded zucchini
1 tsp vanilla
2/3 cup water
3 1/3 cups whole wheat flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp ground cloves
2 cups raisins (optional)
Preheat oven to 350 F.
Cream butter and sugar. Beat in eggs, zucchini and vanilla. Add dry ingredients alternately with water. Mix in raisins if desired.
Pour into three well greased loaf pans. I even put wax paper on the bottom as I find it wants to stick. Grease the wax paper if you use it.
Bake for 60 minutes or until done.
