Nova Scotia Oat Cakes
Every time I go to Cape Breton, I enjoy their oat cakes. I picked this recipe up in one of their tourist brochures. It is fabulous and healthy too.

3 cups rolled oats
3 cups whole wheat flour
1/2 cup brown sugar
1/2 tsp baking soda
2 cups butter
1/2 cup sugar

Preheat oven to 350 F. Combine all dry ingredients in large bowl. Cut in butter and work with hands until dough is manageable. Moisten with cold water. Roll out using flour underneath dough so it does not stick to board. Cut into squares or diamonds. Bake for about 15 minutes until nicely golden on ungreased cookie sheet. Makes 5 dozen.
