Sitting in For Air Care
It has been my pleasure to sit in for Don Scott and Air Care with Sunny Side Up for the past three weeks while Don has been taking a bit of R&R. I want to thank Rita for being my special guest while I have been filling in for Don and for bringing in her musical picks each week. It just goes to show how hard it is to replace Don Scott. It took the both of us and we still did not manage to fill his shoes. He will be back in the "air chair" this Wednesday. We are anxious to hear him back on air.

Theresa Sokyrka Concert
Friday I went to see Theresa Sokyrka in concert. It was a wonderful show. She is so talented as a vocalist, song writer and as a guitar player. But, what I enjoyed the most was her sincerity. She, very obviously, appreciated and loved her fans, that ranged from ages 10-70 plus. She carried herself with an apparent innocence and humility. Though she had great stage presence, she very willingly passed on much of the applause to her band. Then, later she patiently signed autographs for her many fans speaking to each one, trying to give everyone a bit of one on one attention. Theresa certainly is a gem and though I hear much criticism of the "Idol" competition, I'm grateful to it for unearthing this talent so that now we can all enjoy her.

Mildred Ganong's Cookies
Not long ago, I posted another recipe that I got from this dear lady for date squares. I would guess that this is a very old recipe. It is very good and easy to make. These are the cookies I have been using for prizes for the mystery vocalist contest.

1 cup butter
1 1/4 cups brown sugar
1 egg
1 tsp vanilla
1 1/2 cups whole wheat flour
1 tsp baking powder
1 cup coconut
1 1/2 cups rolled oats

Cream first 4 ingredients. At this point I beat in the baking powder and then mix in the remaining dry ingredients.

Roll into balls and put onto a greased cookie sheet.Press down with a fork.

Bake at 375 degrees for 12 about minutes until golden brown.

Last week Lisa and Ryan came into the station with me to help make a promo for Sunny Side Up. They did a great job and I'm getting all kinds of compliments on it. Thank you Lisa and Ryan. Great job!

Orphan Animal Formula
This formula was given to me by a friend who is a veterinarian when my dog had her first litter of puppies. We had two runts that were too small to suck and I had to feed them.

DO NOT CHANGE PROPORTIONS
1 can evaporated milk
2 cans boiling water (use milk can to measure)
2 envelopes of Knox gelatin
1 Tbs. honey
1 Tbs. heavy cream


Dissolve gelatin in hot water. Mix in all other ingredients. Mixture will resemble custard when cool but turn to liquid when warm.

Feed according to veterinarian's instructions.

Special Guest
Tune in August 15th for a Sunny Side Up special. Janet Foster from the Saint John Animal Rescue League will be my guest for the morning. We will have all kinds of your favorite "Dog" and "Cat" musical selections from Peggy Lee with the Alley Cat Song to the Baha Men and Who Let the Dogs Out. Janet is real animal lover and will put a different slant on the "pound" than what you are used to. Tune in from 9:00 am to 12:00 pm (Atlantic).

Crepes

This is an old family recipe for Estonian pancakes. Growing up, these were the only pancakes that I ever had. When I first tasted "Aunt Jemima" pancakes, I thought they were awful, thick and doughy. I have since learned to like them but I still prefer my mom's pancakes or, as you Canadians call them, crepes. We rarely ate these for breakfast but rather for lunch and even for a light supper.
When my own family was young, I would triple the recipe as my kids liked them so much.

4 eggs
1 1/3 cups milk
1 cup flour

1/2 tsp salt (optional)
butter to fry with

jams, preserves, syrups etc. for fillings

In bowl beat eggs slightly. Add remaining ingredients and beat until smooth. Heat skillet to frying temperature and grease with butter. Pour 3-4 tablespoons of batter onto skillet, tipping skillet so batter runs evenly over pan to create a thin crepe. Turn when lightly browned and brown other side lightly.

Serve hot of cold with preserves, jams, syrups etc. Roll up and enjoy!

For a nice dessert serve cold with ice cream rolled into the centre and chocolate sauce drizzled on top.


These microwave well so make extra to have for leftovers.
