Low Carb Shortbread
This is a great recipe for diabetics and those of us who want to cut down on carbs. It is one of my own creations. They are great with a cup of tea.
1/2 cup corn starch
1/2 cup Splenda (cup for cup, not packets)
1 cup whole wheat flour
3/4 cup butter
Put dry ingredients into a bowl. Mix and blend in butter. Roll out and cut cookies out with a cookie cutter. Place cookies onto an ungreased cookie sheet and bake in a 350 degree preheated oven for 17-20 minutes or until edges just start to turn brown.
