Rhubarb-Custard Pie

2 eggs beaten
1 Tbs. milk
1 1/2 cups sugar
1/4 cup flour
3 cups sliced rhubarb
1 cup halved strawberries
1 unbaked pie shell

Mix sugar and flour together in a bowl and put aside.
Put rhubarb and strawberries into a large bowl, toss and put aside.
Beat egg, add milk and pour mixture over rhubarb and strawberries. Add flour/sugar mixture and mix well with other ingredients.
*Pour mixture into pie shell and bake in preheated 450 oven, for 10 minutes and reduce heat to 350 for 40-45 minutes.
Top with meringue and brown

*you can put a pie crust on top instead of using the meringue but this adds, fat, carbohydrates and unnecessary calories.
