Let cool before removing from pan.

Soft Pumpkin Chocolate Chip Cookies

These cookies have a wonderful flavor. I always triple the recipe as it freezes well and is good to have on hand when making roast chicken. But, it is so good that quite often, there is none left to freeze. One of our favorite things to do with the leftovers is to make turkey sandwiches with sliced turkey, a layer of dressing, a layer of cranberry sauce and mayonnaise. Combine all dry ingredients in large bowl. Cut in butter and work with hands until dough is manageable. Moisten with cold water. Roll out using flour underneath dough so it does not stick to board. Cut into squares or diamonds. Bake for about 15 minutes until nicely golden on ungreased cookie sheet. Makes 5 dozen.

Change in Scheduling
There will be a few changes in the scheduling for the months of September and October. It was a wonderful show. She is so talented as a vocalist, song writer and as a guitar player. But, what I enjoyed the most was her sincerity. She, very obviously, appreciated and loved her fans, that ranged from ages 10-70 plus. She carried herself with an apparent innocence and humility. Though she had great stage presence, she very willingly passed on much of the applause to her band. Then, later she patiently signed autographs for her many fans speaking to each one, trying to give everyone a bit of one on one attention. Theresa certainly is a gem and though I hear much criticism of the "Idol" competition, I'm grateful to it for unearthing this talent so that now we can all enjoy her.

Mildred Ganong's Cookies
Not long ago, I posted another recipe that I got from this dear lady for date squares. We rarely ate these for breakfast but rather for lunch and even for a light supper.
When my own family was young, I would triple the recipe as my kids liked them so much.

4 eggs
1 1/3 cups milk
1 cup flour
1/2 tsp salt (optional)
butter to fry with
jams, preserves, syrups etc. for fillings

In bowl beat eggs slightly. Add remaining ingredients and beat until smooth. Heat skillet to frying temperature and grease with butter. Pour 3-4 tablespoons of batter onto skillet, tipping skillet so batter runs evenly over pan to create a thin crepe. Turn when lightly browned and brown other side lightly.

Serve hot of cold with preserves, jams, syrups etc. Roll up and enjoy!

For a nice dessert serve cold with ice cream rolled into the centre and chocolate sauce drizzled on top.

These microwave well so make extra to have for leftovers.

Never trust a skinny cook.

Low Carb Shortbread
This is a great recipe for diabetics and those of us who want to cut down on carbs. Big plump and a bit over ripe berries work the best.

For Glaze
Crush one cup of strawberries. Add enough water to crushed strawberries to make one cup again. Put into a sauce pan and simmer for 3 minutes. Strain. Measure juice. In another cup put enough cold water that with the juice it will equal one cup. To the cold water add the corn starch and mix it in. Then, add water mixture to juice with pinch of salt and sugar and put back into your sauce pan. Put over medium heat and stir until mixture thickens. Cool to warm to touch. Pour glaze over strawberries in pie shell. Cool for 3 hours to set. It can also be heard on the web at http://www.bytemegroup.com:8000/ .

I am so excited about finally getting my own weekday morning slot of CFMH radio. I've been waiting for over a year, often subbing in for other DJs with my program, Sunny Side Up, when they have needed a break. Now it is official. I have been awarded my very own slot Monday mornings 9:00 until noon, AST, and Sunny Side Up will be heard regularly on 92.5 FM in Saint John, NB and on the world wide web.

Sunny Side Up will mostly feature music from yesteryear, from the 50s onward. Hopefully you will find it uplifting and a great way to start your week.

Tune in Monday mornings and I'll serve you your morning Sunny Side Up.

Leanna on air

New Brunswick
Rhubarb-Custard Pie

2 eggs beaten
1 Tbs. milk
1 1/2 cups sugar
1/4 cup flour
3 cups sliced rhubarb
1 cup halved strawberries
1 unbaked pie shell

Mix sugar and flour together in a bowl and put aside.
Put rhubarb and strawberries into a large bowl, toss and put aside.
Beat egg, add milk and pour mixture over rhubarb and strawberries.
